Why aren’t my chicken bites crispy?

The skillet may have been overcrowded, or the chicken may have had too much moisture before cooking. For the best texture, pat the chicken dry, coat evenly with cornstarch, and cook in a single layer.

Can I make these ahead of time?

Yes, these are great for meal prep! Store them in the refrigerator and reheat in a skillet or air fryer for the best texture.

Can I double this recipe?

Yes, but cook the chicken in batches so the skillet doesn’t get overcrowded….this helps the chicken brown instead of steam.

The recipe

Ingredients

  • 1 pound boneless skinless chicken thighs (cut into bite-sized pieces)
  • 3 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1-2 teaspoons lemon juice OR balsamic vinegar
  • Chopped fresh parsley, for garnish (if desired)

Instructions

  1. 1In a large bowl or gallon sized bag, add chicken, cornstarch, garlic powder, Italian seasoning, salt, and mustard powder. Toss to combine until evenly coated.
  2. 2In a large skillet, heat olive oil over medium heat. Add chicken bites in a single layer and cook for 6-8 minutes, stirring/flipping occasionally, until golden and cooked through (and the internal temperature reaches 165℉).
  3. 3Remove chicken bites to a separate plate so that you can make the garlic butter sauce.
  4. 4To make the sauce: in the same skillet as the chicken, melt butter over medium heat. Add in minced garlic and lemon juice/balsamic vinegar and cook for 1-2 minutes, or until garlic is fragrant (but be careful not to burn it).
  5. 5Add chicken bites back to the skillet and stir to coat. Add fresh parsley, if desired. Serve immediately.
